In my constant search to further my understanding of human health, a while back I was focusing on lectins as taught by Dr. Grundy, MD.

Dr. Grundy advises that by pressure cooking lectin-rich plant foods such as beans, one can mitigate the negative effects of lectins (1). Lectins are essentially plant defense compounds that when eaten by humans can act as anti-nutrients which may block absorption of vital nutrients in our gut and also can increase intestinal wall permeability which is known as Leaky Gut (2).

That got me thinking about how a long time ago I had an old-fashioned yet well-made pressure cooker that I used often. But, I do not have that cooking pot anymore.

Often overlooked, the rutabaga is a root vegetable that can be mistaken for a turnip.  Purple and white turnips are usually two or three inches in diameter, but a rutabaga with its brownish white color is twice that size.  Have you tried this wonderful vegetable?

If you haven’t yet tried consuming this healthy alternative, now may be a good time.  It’s high in fiber, which we know is great for digestion and gut health. The Rutabaga, Brassica napobrassica or napus, often called Swede, does not have an extremely long history, yet researching it and reading others’ perspectives on it was both interesting and gave me a few chuckles.  The most common belief is that the Rutabaga originated sometime in the 17th century when as one source put it: “the wild cabbage (Brassica oleracea) and the turnip (Brassica rapa) got jiggy somewhere in Bohemia.”  Others attribute the creation of the rutabaga to Swiss botanist Gaspard Bauhin, and still others think that due to the extreme cold hardiness of the plants the cross could have occurred as far back as the Middle Ages (5th century to approximately the 14th century).  Rutabagas were popular in the northern areas of Europe where they were relatively easy to grow in the colder climates.  One of the earliest uses for this relatively simple vegetable was as feed for...

The Pegasus Project

This month I have the great pleasure to share with you a very special equine rescue center in North Texas located an hour east of Dallas near Tyler, Texas.

This horse rescue is named The Pegasus Project with the motto “We Give Horses Wings”! The famous winged horse of Greek Mythology is a very fitting image to describe the healing transformation that occurs when these once suffering horses come under the care of this amazing horse rescue!

This motto speaks volumes as they liberate abused, neglected, and starving horses from their physical suffering and help heal their emotional wounds as well. Through their excellent holistic equine care and rehabilitation, the founders, Allyson and Mike DeCanio, and their staff are very often able to bring horses, mules, and donkeys back from the brink of death to vibrant health. Once restored to health, these horses can then lead happy, healthy lives in their new adopted forever homes.

Orphan Acres Inc Horse Rescue located in Viola, Idaho

I am so happy to share the following information about a long-standing horse rescue in Viola, Idaho, named Orphan Acres, Inc.

I recently had an informative conversation with its Founder and President, Brent Glover, while he was on his lunch break during one of his typical 14+ hour days (7 days/week) at this devoted horse rescue. Talk about a LOT of work and DEVOTION by this dedicated man!

He currently has 79 horses at the rescue (but he never knows when he will be asked to assist in another rescue or how many new horses will need his help). He has been at this for over FORTY-FIVE YEARS!!! His rescue has taken in not only horses, but also wildlife that needed help and healing before they were released back into the wild once again. Brent did have a great childhood helping raise horses and exotic animals (even lions!), and now with all of his experience running Orphan Acres, I believe Brent must be one of the wisest horsemen on the planet!

Drifter’s Hearts of Hope is a dedicated horse rescue in Franktown, Colorado. When you learn about this outstanding organization, you will see how admirable their work is and how you can become involved in helping these magnificent rescued horses have a second chance in life! 

It all started with a horse named Drifter, who was saved from slaughter and went on to be a very special companion to a young girl. This young girl and her friends then went on to try and rescue other horses, and that is how this truly great organization came into existence! What a touching story!

Drifter’s Hearts of Hope (DHOH)is a 501(C)3 non-profit organization committed to circumventing the horse-slaughter pipeline.
